Cedar Plank Salmon
Serves: 6 || Prep Time: 20 minutes (plus 1 hour soaking time)

Salmon Ingredients
- 1 untreated cedar plank (about 6×14 inches)
- 2 to 2½ lbs. salmon fillet, skin-on
- 2 T olive oil
- Salt and freshly ground black pepper
- 1 tsp. garlic powder
- 1 tsp. smoked paprika
- Fresh thyme or parsley for garnish
- Sliced lemon
- Lemon wedges
Glaze Ingredients
- ½ cup balsamic vinegar
- ¼ cup brown sugar
- 1 T honey
- 4 T butter
- 1 vanilla bean, split lengthwise
- 1 garlic clove, minced
- Pinch of salt
Directions
Step 1: Soak the cedar plank. Place the cedar plank in water for at least 1 hour before grilling. Keep submerged with a heavy bowl or pan.
Step 2: Make the glaze. In a small saucepan over medium heat, combine balsamic vinegar, brown sugar, honey, garlic and salt. Scrape the seeds from the vanilla bean into the saucepan and add the pod as well. Bring to a gentle simmer and cook for about 8–10 minutes, stirring occasionally, until slightly reduced. Lower the heat and whisk in the butter one tablespoon at a time until smooth and glossy. Remove the vanilla pod and set aside.
Step 3: Prepare the salmon. Preheat grill to medium heat, about 375–400 degrees. Slice the lemon and place on the soaked cedar plank. Pat salmon dry and place skin-side down on top of the lemon slices. Drizzle with olive oil and season with salt, pepper, garlic powder and smoked paprika.
Step 4: Grill the salmon. Place the cedar plank directly on the grill grates and close the lid. Grill for about 10–12 minutes. Brush generously with the glaze and continue cooking another 5–8 minutes, brushing once more near the end, until the salmon flakes easily with a fork. Remove carefully from grill.
Step 5: Serve. Top with fresh herbs and serve with lemon wedges.
TIP: If the cedar plank begins to flame at the edges, lightly mist with water from a water bottle.
