What’s Cookin’ – Cheesecakes Unlimited Feta Chicken Salad

One of the toughest decisions a person can make in the summer is which salad to enjoy at Cheesecakes Unlimited. Fortunately, their chefs have shared the recipe for their Feta Chicken Salad, one of the most popular on their menu, and one that’s easy to make at home. Enjoy!

Cheesecake’s Unlimited Feta Chicken Salad

INGREDIENTS:

2 oz. feta cheese
2 oz. diced tomatoes
2 oz. diced cucumber
2 oz. sliced red onion
2 oz. sunflower seeds
Full head of lettuce – romaine, red, green or sweet butter lettuces (basic spring mix)
4 oz. chicken

DIRECTIONS:

Combine all ingredients in a bowl. Finish with a dressing of garlic basil vinaigrette, made with balsamic pesto, olive oil, red wine vinegar, salt and pepper to taste. Serves one.
