Dibble Creek Outpost’s Smoked Prime Rib

INGREDIENTS:

  • 1 6–8 lb. prime rib roast
  • 1 T seasoned salt
  • 1 T pepper
  • 4 T fresh garlic, crushed or minced
  • 1/2 lb. butter

DIRECTIONS:

Step 1: Mix salt, pepper, garlic and butter.

Step 2: Score top of roast in an “x” pattern.

Step 3: Liberally coat and massage roast with butter mixture leaving a generous amount on top of the scored surface.

Step 4: Place in smoker over pecan or oak, maintaining a temperature of 250 degrees for 3 to 31/2 hours to reach an internal temperature of 120-125 degrees (rare).

Step 5: Tent roast with aluminum foil and let rest 20-30 minutes prior to slicing.
